“Due to rising prices of old tree material and the uningestable nature of fresh plantation teas, Xizihao made a move to ferment old tree material to satisfy the needs of our premium ripe collectors. This tea was made under the supervision of Mr. Zhao, a previous Menghai Tea Factory fermentation master, using BaiShaJing spring water which was used by MTF to ferment teas. We fermented the raw material in October to about a 70% level of fermentation. (as it is most optimal)"
